I have always had a strong desire to help people who are struggling. I wanted to see them thrive. Like Paul, I believed that Christianity and the Bible held answers to many of life’s difficulties. As a result, I was involved for several years with a Christian ministry called The Navigators.
The Navigator ministry focuses on building relationships with individuals and small groups, creating a safe space for personal growth. During my time with The Navigators, I received training in spiritual growth. I also provided training to others, which further fueled my desire to serve.
Over time, my passion shifted towards education. This change was influenced by my children’s school experiences. As they progressed through the grades, I worked as a substitute teacher at their school and found fulfillment in helping students learn.
When my two younger children entered middle school, I became employed as an assistant to a Special Education Teacher. In this new position I discovered my true calling. With the encouragement of the teacher I was assisting, I decided to pursue a master’s degree in teaching with a specialization in special education.
For the next ten years, I taught special education in a public school before retiring. After retiring from the public school, I worked for a private school an additional five years. The private school served students with special needs which allowed me to continue making a difference in the lives of those who require extra support.
In addition to my passion for teaching, cooking and preparing healthy meals has been a long-time interest of mine. Both Paul and I faced health problems which motivated us to maintain a healthy diet. We did some research and adopted a whole food plant-based diet that suited our unique situation. This diet enabled us to easily lose ten pounds in ten days. We felt great!
As I embarked on our plant-based journey, I realized the importance of providing quick, easy, healthy, and tasty meals for busy working parents like myself. Understanding that parents desire nutritious meals without spending excessive time in the kitchen or spending a fortune at the grocery store, I began modifying non-vegan dishes into plant-based recipes that emphasized whole foods.
With 15 years of experience teaching basic cooking skills and promoting healthy eating choices as an educator, I saw the saw first hand the profound impact these skills can have on one’s life.
Having worked in special education, I also saw the pain and suffering caused by inadequate reading skills. This led me to pursue a two-fold mission…
helping busy working parents improve their wellbeing by improving their diet
assisting those with reading difficulties gain confidence and competence in their reading abilities
Since retiring, I have published over sixty-nine plant-based cookbooks available on Amazon. These books showcase the recipes I have developed. You can see my cookbook collection HERE.
Additionally, I created an online course that provides instructional videos and tips for preparing healthy economical meals in minutes, empowering individuals to feel better, increase energy levels, lose weight, and maintain a healthy lifestyle. You can learn more about the course HERE.
Furthermore, I have established an affiliate relationship with an organization specializing in improving reading proficiency for individuals at various skill levels. This resource aims to help anyone struggling with reading become proficient very quickly. Those with inadequate reading skills are often able to read at a college level after only a few hours. You can learn more about the program HERE.
